Pistachio
The pistachio is a dried fruit produced by the pistachio tree (Pistacia vera L.), a shrub in the Anacardiaceae family.
It takes the form of a small, greenish, sweet-tasting seed, enclosed in a shell that opens when the fruit is ripe.
Pistachios can be eaten raw, like almonds, or roasted. They are often served as an aperitif. Pistachios are used in sauces, stuffings, terrines, pâtés, ice cream and pastries.
It contains around 50 % fat, 82 % of which is unsaturated fatty acids, around 19 % protein and 16 % carbohydrates. It is a source of vitamin B6, B1, manganese, phosphorus and magnesium.()
