Production

Asparagus is a plant of the Asparagaceae family native to the eastern Mediterranean basin. Known to the Romans, it has been grown as a vegetable in France since the 15th century. The term also refers to its edible shoots, which come from rhizomes from which underground buds or turions sprout each year, giving rise to stems rising to between 1 and 1.5 metres.()
